Quality evaluation of tropical passionfruit juice sweetened: physical-chemical characterization and labeling.

Abstract
One of the segments of great prominence of the Brazilian economy is the fruticulture sector. In this sector, we find a great production and commercialization of passionfruit, fruit known all over Brazil, the main producer and world-wide consumer. In this work, four marks of tropical sweetened juices of passionfruit, named, A, B, C, and D, commercialized in the city of Fortaleza were accessed. The average values of pH, acidity, soluble solids (ºBrix), reducing and not reducing sugars, and vitamin C varied respectively of (2.95 to 3.64); (0.33 to 0.62)%; (11.2 to 12.4)ºBrix; (3.76 to 11.98)%; (0.60 to 7.24)%, and (0.57 to 9.77) mg.100 mL-1 for tropical juices, A, B, C, and D, respectively. After performance of the physical-chemistries analyses it was recognized that 100% of the marks studied meet the established parameters for the standards of identity and quality (Bureau of Agriculture and Livestock, Brazil, 2003). Regarding evaluation of the labeling, it was verified that 100% of the marks are in accordance with the established parameters as for the Complementary Nutritional Information presented on the label.
